FRENCH SKILLET EGGS
First a small broiler proof pan (NO PLASTIC HANDLES or PLASTIC ANYTHING, 5ish inches wide) I use a small cast iron pan.
Ingredients for 1 serving
3 eggs
Unsalted Butter
Cream (The good organic stuff, that's just cream - check the ingredient list if you are not sure.)
2 Tablespoons Parmesan cheese (The good stuff from Italy, not the green can)
1 sprig of Tarragon
Directions
Preheat oven on broil. 3 pats of butter in bottom of pan, and enough cream to coat the bottom. Put in oven for 3 minutes or until cream starts to brown slightly. In the meantime carefully crack eggs into a bowl. Into another different bowl Grate parm, chop up tarragon, add salt and pepper to taste. Pull out super hot pan from oven, slowly pour in eggs. with a spoon stir to even out cream distribution. Sprinkle with parm/tarragon topping. Put back under broiler for 3 minutes, or until egg whites are solid, it will start to brown slightly. Serve with hearty toast. |
